Chicken, red pepper and broccoli Alfredo pasta bake

Step 1: Pasta

  • Boil pasta in a pan of boiled water until they are soft.
  • Drain the water. (keep a little pasta water for later.)


Step 2: Chicken, vegetables and Sauce (same time as step 1)
  • Add some oil to a non stick pot over medium to high heat, cook the chicken until they are golden brown outside.
  • Add peppers and broccoli to the pot, season with a pinch of salt and cook until peppers are softened.
  • Then add sauce to the pot and cook over low heat until chicken is fully cooked and broccoli is softened.
  • Finally, add cooked pasta to the pot and mix well. (add a little pasta water if the sauce gets too thick)
  • Transfer everything into a oven proof dish, sprinkle cheese and breadcrumb mixture on top and bake in the oven at 180C until the topping is golden brown.
