People often ask me, "What is authentic Chinese food?" That's always been a tricky question to answer. China is enormous, almost the size of Europe, with countless provinces and ethnic groups, each offering its own distinct cuisine. Summing it up in one sentence is nearly impossible. Bullfrogs, crayfish, pig and duck tongues, cuttlefish, pigeon, pig trotter, duck blood soup, jellyfish, crabs, prawns, conch, eelsโฆ all these weird and wonderful dishes! It's been so long since I've had them, I can barely remember what they taste like. Can't wait! ๐
