Step 1: Meat Sauce
- Add some oil to a pot over medium to high heat, brown the mince and season with salt, then take them out and set aside.
- Add some oil to the same pot, cook the vegetables until they are softened, while cooking season with salt.
- Add mince back in with vegetables, then the red sauce (tomato), continue to cook over low heat until the sauce become rich and thick. (add a little water or pasta water if the sauce gets too thick)
Step 2: Penne
- Boil penne in a pan of boiled water until they are soft.
- Drain the water, then season the pasta with a pinch of salt.
Step 3: Layering and Baking
- Layer pasta at the bottom of an oven proof dish, then meat sauce, then white sauce, sprinkle cheese and breadcrumb mixture on top and bake in the oven at 180C until the topping is golden brown.
Step 4: Salad
- Season with a pinch of salt and drizzle with a little olive oil.
