Courgette, spinach, mushroom pesto spaghetti

Step 1: Spaghetti

  • Boil spaghetti in a pan of boiled water until they are soft.
  • Drain the water.


Step 2: courgette, vegetables and Sauce (same time as step 1)
  • Add some oil to a non stick pot over medium to high heat, cook the onions and courgette until they are soft and slightly golden brown outside.
  • Add mushroom to the pot, cook until they are softened.
  • Then add spinach and sauce to the pot and cook over low heat until it starts to bubble gently.
  • Finally, add pasta to the pot and mix well. (add a little pasta water if the sauce gets too thick)
