Beijing style Quorn in fried soy bean sauce with egg noodles, carrots and cucumber
Step 1: Quorn mince
Add a little oil to a frying pan and place over medium heat.
Cook Quorn mince until they are fully brown.
Take out of the pan and set aside.
Step 2: Vegetables and sauce
Add a little oil to the same frying pan over medium to high heat.
Add in onions and mushroom, season with salt and cook continuously until they are softened.
Put the Quorn mince back in with the vegetables, add sauce then simmer over low heat for 10 minutes until the mince has absorbed all the flavours.
Step 3: Noodles (when the sauce is nearly done)
Boil noodles in a pan of boiled water until they are soft.
Drain the water.
Serve the ‘meat’ sauce with noodles along with carrots and cucumber.
