BBQ mushroom and tofu in a brioche bun with coleslaw and wedges
Step 1: Potato wedges
Cut the potatoes into chunky wedges and coat them with oil and season with salt.
Bake them in the oven at 180c for roughly 30 minutes until they are golden brown outside and soft in the middle, remember to turn them halfway.(You can also use air fryer to achieve the same result.)
Step 2: mushroom and tofu (give potato a 20 minute head start)
Fry the mushroom and tofu in a frying pan over medium heat.
Let it rest, then mix in the bbq sauce a little at a time to your liking.
