Step 1: Rice noodles
- Soak rice noodles in a pan of boiled water until they are al dente.
- Drain the water and rinse under cold water then set aside.
- Drizzle a little olive oil to stop them sticking together.
Step 2: Chicken
- Add a little oil to the wok/frying pan and place over medium heat.
- Cook chicken to 80% done (golden brown outside and still a little soft in the middle)
- Take out of the pan and set aside.
Step 3: Vegetables and finish the whole dish
- Add a little oil to the same wok or frying pan over medium to high heat.
- Add in vegetables, season with salt and cook continuously until the vegetables are softened.
- Put the chicken back in with vegetables, add sauce then cook until chicken is fully cooked.
- Add noodles in, stir well and cook until noodles are hot.
