Courgette and Sweet Potato with peppers and broccoli Alfredo pasta bake
Step 1: Spaghetti
Boil spaghetti in a pan of boiled water until they are soft.
Drain the water. (keep a little pasta water for later.)
Step 2: Vegetables and Sauce (same time as step 1)
Add some oil to a non stick pot over medium to high heat, cook the sweet potatoes and broccoli and season with a pinch of salt until they are a little softer, add a little water if needed.
Add peppers and courgette to the pot, season with a pinch of salt and cook until they are softened.
Then add sauce to the pot and cook over low heat until everything is fully combined.
Finally, add cooked pasta to the pot and mix well. (add a little pasta water if the sauce gets too thick)
Transfer everything into a oven proof dish, sprinkle cheese and breadcrumb mixture on top and bake in the oven at 180C until the topping is golden brown.
