Courgette and Sweet Potato with peppers and broccoli Alfredo pasta bake

Step 1: Spaghetti

  • Boil spaghetti in a pan of boiled water until they are soft.
  • Drain the water. (keep a little pasta water for later.)


Step 2: Vegetables and Sauce (same time as step 1)
  • Add some oil to a non stick pot over medium to high heat, cook the sweet potatoes and broccoli and season with a pinch of salt until they are a little softer, add a little water if needed.
  • Add peppers and courgette to the pot, season with a pinch of salt and cook until they are softened.
  • Then add sauce to the pot and cook over low heat until everything is fully combined.
  • Finally, add cooked pasta to the pot and mix well. (add a little pasta water if the sauce gets too thick)
  • Transfer everything into a oven proof dish, sprinkle cheese and breadcrumb mixture on top and bake in the oven at 180C until the topping is golden brown.
