Dan Dan Noodles (veg) with greens

Step 1: Quorn mince
  • Add a little oil to a frying pan and place over medium heat.
  • Cook Quorn mince until they are fully brown.
  • Take out of the pan and set aside.

Step 2: Vegetables and sauce
  • Add a little oil to the same frying pan over medium to high heat.
  • Add in onions and greens, season with salt and cook continuously until they are softened.
  • Put the Quorn mince back in with the vegetables, add sauce then simmer over low heat for 10 minutes until the mince has absorbed all the flavours.

Step 3: Noodles (when the sauce is nearly done)
  • Boil noodles in a pan of boiled water until they are soft.
  • Drain the water.
  • Serve the meat sauce with noodles along with carrots and cucumber.
