Penne with courgette in creamy vodka and tomato sauce

Step 1: Pasta
  • Add pasta to a pan of boiling water and cook until they are al dente.
  • Drain the water then set aside.

Step 2: Vegetables and finish the whole dish (give pasta a 10 minute head start)
  • Add a little oil to the same frying pan over medium to high heat.
  • Add in vegetables, season with a little salt and stir continuously until they are softened.
  • Add sauce in, then the pasta, stir well and cook until everything is fully combined.
