cajun chicken and chorizo in rich tomato sauce with green beans and salad potatoes

Step 1: Salad potatoes
  • Cut the potatoes to a smaller size if you prefer.
  • Boil them in a pan of cold water until they are soft. 
  • Season with a pinch of salt and drizzle with a little olive oil.

Step 2: Chicken, Chorizo and sauce(while potatoes are cooking)
  • Add a little oil to the frying pan and place over medium heat.
  • Cook chorizo first, then take out of the pan and set aside. Drain off the excess oil.
  • They fry the chicken until 80% done.(Gold brown outside and a little soft in the middle).
  • Add chicken to chorizo and set aside.
  • Add a little oil to the same pan, fry onions and peppers until they are soft and season with a pinch of salt.
  • Add chicken and chorizo along with the sauce in with vegetables and cook until chicken is fully cooked.(add a little water if the sauce gets too thick).

Step 3: Green beans
  • Add 1 tablespoon of oil to wok or frying pan and place over medium to high heat.
  • Add in green beans, season with salt and stir continuously for 1 minute.
  • Add a little water just to cover the bottom of the pan and cook with lid on until the green beans are tender.
