cajun chicken and chorizo in rich tomato sauce with green beans and salad potatoes
Step 1: Salad potatoes
Cut the potatoes to a smaller size if you prefer.
Boil them in a pan of cold water until they are soft.
Season with a pinch of salt and drizzle with a little olive oil.
Step 2: Chicken, Chorizo and sauce(while potatoes are cooking)
Add a little oil to the frying pan and place over medium heat.
Cook chorizo first, then take out of the pan and set aside. Drain off the excess oil.
They fry the chicken until 80% done.(Gold brown outside and a little soft in the middle).
Add chicken to chorizo and set aside.
Add a little oil to the same pan, fry onions and peppers until they are soft and season with a pinch of salt.
Add chicken and chorizo along with the sauce in with vegetables and cook until chicken is fully cooked.(add a little water if the sauce gets too thick).
Step 3: Green beans
Add 1 tablespoon of oil to wok or frying pan and place over medium to high heat.
Add in green beans, season with salt and stir continuously for 1 minute.
Add a little water just to cover the bottom of the pan and cook with lid on until the green beans are tender.
