Chicken and chorizo in basil and tomato sauce with spinach and penne pasta
Step 1: Pasta
Add pasta to a pan of boiling water and cook until they are al dente.
Drain the water then set aside.
Step 2: Chicken and Chorizo(while pasta is cooking)
Add a little oil to the frying pan and place over medium heat.
Cook chorizo first, then take out of the pan and set aside. Drain off the excess oil.
Add a little oil to the same pan, cook the chicken until 80% done.(Gold brown outside and a little soft in the middle).
Add chicken to chorizo and set aside.
Step 3: Vegetables and finish the whole dish
Add a little oil to the same frying pan over medium to high heat.
Add in onions, season with a little salt and stir continuously until they are softened.
Put the chicken and chorizo back in with onions along with spinach, add sauce then cook until chicken is fully cooked.
Add pasta in, stir well and cook until everything is fully combined.
