Chicken and chorizo in basil and tomato sauce with spinach and penne pasta

Step 1: Pasta
  • Add pasta to a pan of boiling water and cook until they are al dente.
  • Drain the water then set aside.

Step 2: Chicken and Chorizo(while pasta is cooking)
  • Add a little oil to the frying pan and place over medium heat.
  • Cook chorizo first, then take out of the pan and set aside. Drain off the excess oil.
  • Add a little oil to the same pan, cook the chicken until 80% done.(Gold brown outside and a little soft in the middle).
  • Add chicken to chorizo and set aside.

Step 3: Vegetables and finish the whole dish
  • Add a little oil to the same frying pan over medium to high heat.
  • Add in onions, season with a little salt and stir continuously until they are softened.
  • Put the chicken and chorizo back in with onions along with spinach, add sauce then cook until chicken is fully cooked.
  • Add pasta in, stir well and cook until everything is fully combined.
