Courgette and broccoli in basil and tomato sauce with spinach and penne pasta
Step 1: Pasta
Add pasta to a pan of boiling water and cook until they are al dente.
Drain the water then set aside.
Step 2: Courgette and broccoli(while pasta is cooking)
Add a little oil to the frying pan and place over medium heat.
Add in broccoli and courgette and cook for 1 minute.
Then add a little water to cover the bottom of the pan, cover the pan with a lid and continue to cook until the greens are softer.Take out the pan and set them aside.
Step 3: Onions and spinach and finish the whole dish
Add a little oil to the same frying pan over medium to high heat.
Add in onions, season with a little salt and stir continuously until they are softened.
Put the courgette and broccoli back in with onions along with spinach, add sauce then pasta in, stir well and cook until everything is fully combined.
