Courgette and broccoli in basil and tomato sauce with spinach and penne pasta

Step 1: Pasta
  • Add pasta to a pan of boiling water and cook until they are al dente.
  • Drain the water then set aside.

Step 2: Courgette and broccoli(while pasta is cooking)
  • Add a little oil to the frying pan and place over medium heat.
  • Add in broccoli and courgette and cook for 1 minute.
  • Then add a little water to cover the bottom of the pan, cover the pan with a lid and continue to cook until the greens are softer.Take out the pan and set them aside.

Step 3: Onions and spinach and finish the whole dish
  • Add a little oil to the same frying pan over medium to high heat.
  • Add in onions, season with a little salt and stir continuously until they are softened.
  • Put the courgette and broccoli back in with onions along with spinach, add sauce then pasta in, stir well and cook until everything is fully combined.
