Curry flavoured rice noodles with chicken, mixed vegetables and cashewnuts
Step 1: Rice noodles
Soak rice noodles in a pan of boiled water until they are al dente.
Drain the water and rinse under cold water then set aside.
Drizzle a little olive oil to stop them sticking together.
Step 2: Chicken
Add a little oil to the wok/frying pan and place over medium heat.
Cook chicken to 80% done (golden brown outside and still a little soft in the middle)
Take out of the pan and set aside.
Step 3: Vegetables and finish the whole dish
Add a little oil to the same wok or frying pan over medium to high heat.
Add in vegetables, season with salt and stir continuously for 1 minute.
Add a little water, just to cover the bottom of the wok, and cook with lid on until the vegetables are al dente.
Put the chicken back in with vegetables, add sauce then cook until chicken is fully cooked.
Add noodles in, stir well and cook until noodles are hot.
Sprinkle cashew nuts on top.
