Garlic sriracha tofu/Quorn stir fry with mixed vegetables and egg noodles
Step 1: Noodles
Boil noodles in a pan of boiled water until they are al dente.
Drain the water and rinse under cold water then set aside.
Drizzle a little olive oil to stop them sticking together.
Step 2: Tofu/Quorn
Add a little oil to the wok/frying pan and place over medium heat.
Cook tofu/Quorn gently until they are a little charred outside.
Take out of the pan and set aside.
Step 3: Vegetables and finish the whole dish
Add a little oil to the same wok or frying pan over medium to high heat.
Add in vegetables, season with salt and stir continuously for 1 minute.
Add a little water, just to cover the bottom of the wok, and cook with lid on until the vegetables are al dente.
Put the tofu/Quorn back in with vegetables, add sauce then cook for 1 minute.
Add noodles in, stir well and cook until noodles are hot.
